Life has been busy lately and there’s nothing better than a recipe that feeds us all that’s ready in under 30 minutes.
This Sausage Hash is so quick to make and its loved by all of us, I like to add extra red pepper flakes to mine to spice it up a bit because the kids prefer it NON SPICY haha! You can also alternatively use hot Italian sausage instead of mild, and play around with whatever veggies you want to throw in.

Skillet Sausage & Hash

6 mild Italian sausages
4 russet potatoes
2 red peppers, diced
1/2 white onion, diced
3 cloves garlic, minced
4 sprigs fresh thyme
1/2 tsp dried oregano
1 tsp smoked paprika
1/2 tsp red pepper flakes
salt and pepper, to taste
Directions
- Preheat oven to 425 degrees.
- Chop potatoes into 1/2 inch cubes and place on sheet pan with a drizzle of olive oil. Sprinkle salt and pepper and toss to coat. Arrange them flat on the tray and bake for 25 minutes or until crispy, flipping halfway through.
- Meanwhile, drizzle a large heavy skillet with olive oil over med-high heat.
- Cook the sausages thoroughly and slice them into bite-size pieces. Remove from pan and set aside on plate.
- In same pan, add the red peppers, onion and garlic. Cook for about 5 minutes and then return the sausages to the pan. Carefully add the potatoes as well, and fold everything together gently.
- Season with a little thyme, oregano, paprika, red pepper flakes (optional), and salt and pepper to taste.
- Serve hot. Enjoy 🙂
