Apple Fritter Cake Loaf

This fritter-like loaf is made up of fluffy cake and layers of apple and brown sugar with a touch of cinnamon, drizzled with a delicious glaze. So yum! It’s perfect for breakfast, or dessert! Enjoy 🙂

Apple Fritter Cake Loaf

Ingredients

  • 1/3 cup light brown sugar
  • 1 teaspoon cinnamon
  • 1/2 cup butter, softened
  • 3/4 cup granulated sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 1/2 cups all-purpose flour
  • 2 tsp baking powder
  • 1/2 cup milk
  • 2 apples, chopped
  • 2 Tbsp sugar
  • 1 tsp cinnamon
  • 3-4 Tbsp milk (for glaze- may need more or less)

Directions

  1. Preheat oven to 350 degrees. Coat 9X5-inch loaf pan with butter
  2. Mix brown sugar and cinnamon together in small bowl, set aside.
  3. In mixing bowl with paddle attachment, beat sugar and softened butter until creamy and smooth. Beat in eggs, one at a time. Add vanilla and mix.
  4. Add flour and baking powder to the creamed butter mixture and beat until blended. Mix milk in and continue mixing until batter is smooth.
  5. In seperate, small bowl, toss peeled, chopped apples with the 2 Tablespoons of sugar and the cinnamon.
  6. Pour half the batter into the loaf pan. Add half the chopped apple mixture on top of the batter and sprinkle half the brown sugar mixture on top of that.
  7. Pour remaining batter over apple mixture and top with remaining brown sugar mixture.
  8. Bake in oven for approx 1 hr 15 mins. Or until knife inserted in center comes out clean.
  9. Meanwhile, to make glaze, mix the powdered sugar with a couple tablespoons of milk until it reaches a drizzling consistency.
  10. Remove loaf from oven, let rest for about 15 minutes before transferring to a cooling rack. Drizzle with glaze and serve warm. Enjoy.
