Loaded Potato Soup

This is my favorite chilly weather soup 🙂 So yummy, warm and inviting, it’s like a hug on a cold day. This recipe is one I’ll use time and time again, and it’s never boring. My kids all eat it up and with that crumbled bacon on top, who could really resist?? So delicious and the perfect meal for busy weeknights OR a lazy weekend, it’s always a good time for this comforting bowl of potato soup. Enjoy!

Loaded Potato Soup

Ingredients

  • 1/2 lb bacon, diced

  • 1 white onion, chopped

  • 6 russet potatoes, peeled and diced

  • 1/2 cup all-purpose flour

  • 4 cups whole milk

  • 2-3 cups chicken broth

  • 2 cloves garlic, minced

  • 1 cup grated cheddar cheese

  • 1 cup sour cream

  • salt and pepper, to taste

  • garnish: diced green onion or chives, additional shredded cheese and scoop of sour cream, additional crumbled bacon

Directions

  • In a large pot, add the finely chopped bacon and cook over med-high heat until browned and crisp, remove from pot and set aside. Leave bacon grease in pot.
  • Add chopped onion and garlic to pot and saute for about 5 minutes. Add flour and stir until it has dissolved in with no remaining clumps.
  • Add chicken broth and potatoes and increase heat to high. Scrape bottom of pot and stir. When broth reaches a bowl, reduce heat and cover pot. Let simmer for about half an hour, until potatoes are tender.
  • Mash potatoes in the pot gently with potato masher or large fork (you may skip this step if you prefer the potato chunks) and add in the cheese, bacon and sour cream, reserving a little bacon and cheese for topping. Sprinkle in a little salt and pepper until seasoned to your taste.
  • Divide soup into serving bowls and top with bacon and cheddar and desired garnish, serve with ciabatta or other crunchy bread and enjoy! 🙂
