Spicy Tomato, Chicken & Spinach Linguine

This light, fresh pasta is an essential for easy weeknight dinners. It is simple yet elegant and can be prepped so easily, you can even make it ahead and just toss it back on the stove in time to serve! I know this will be one of my go-to’s this summer when I just want something quick to serve that will make everyone content. Enjoy!

Tomato, Chicken and Spinach Linguine

Ingredients

  • olive oil
  • 4 chicken breast, trimmed
  • 1 large tomato, diced
  • 3 cloves garlic, minced
  • 1/3 cup sun-dried tomatoes
  • 1/2 tsp red pepper flakes
  • 1/2 cup chopped fresh basil
  • salt and pepper
  • 3 cups fresh spinach
  • 1/2 cup grated parmesan
  • 1/2 cup fresh basil leaves
  • 8 oz linguine

Directions

  1. In a large pot, boil water and cook linguine per package directions. Set aside in colander.
  2. Meanwhile, heat a large skillet over medium heat, add olive oil and then chicken. Cook the chicken until cooked through, then slice into strips.
  3. Add the tomatoes to skillet and saute until lightly cooked. Reduce heat to low and add the garlic, red pepper flakes, sun-dried tomatoes, salt and pepper, and then simmer on low until flavors combine.
  4. Add spinach, basil and Parmesan to the chicken and tomatoes, then add the cooked pasta, tossing until well combined.
  5. Transfer pasta to serving bowls and garnish with additional Parmesan and fresh black pepper. 🙂
