Steak Fajitas

1/2 cup lime juice
1/4 cup pineapple juice
2 Tablespoons Worcestershire sauce
drizzle of olive oil
3 cloves garlic, minced
2 tsp ground cumin
3 tsp chili powder
2 tsp smoked paprika
1/2 tsp salt
1/2 tsp ground black pepper
1/4 cup fine chopped cilantro
approx 3 lbs flank steak
olive oil (for pan)
1 white onion, sliced
4 bell peppers, colors of your choice
Choice of toppings: shredded cheese, guacamole, salsa, sour cream, additional fresh cilantro, etc.
Directions
- To prepare marinade, combine the lime juice, pineapple juice, Worcestershire sauce, olive oil, and all spices, including the chopped cilantro into a bowl. Combine well and then brush generously over steak, both sides, and place in refrigerator, covered, to marinate for at least an hour. Reserve remaining marinade to add to skillet later.
- In a skillet over med-high heat, heat the olive oil and then place the steaks in skillet to cook for about 5 minutes per side, depending on thickness of steak. Once cooked to desired doneness, slice steak into thin strips against the grain and set aside on plate.
- Add a drizzle more olive oil to skillet and then add onion and peppers, tossing to cook for about 2 minutes. Then, return the steak strips to pan and toss together with remaining marinade.
- On separate skillet, or on sheet pan in oven at 375 degrees, toast the tortillas until slightly browned but still flexible. Set tortillas on serving tray and fill with steak mixture. Top with choice of fixings. Enjoy!!
