Crispy sweet potato fries are the best, right? And these are actually so simple and SO good.. especially with that garlicky aioli. I love these fries, and so does everyone else around here. They’re crisp, sweet and yummy! The trick is really how you bake them. The more they touch in the oven, the less crisp they’ll be. So it’s best to use two pans to really give them their space. Shoe String Sweet Potato Fries & Garlic Aioli

2 medium sweet potatoes, peeled and sliced into evenly thin, long fries
1 tablespoon corn starch
1 teaspoon kosher salt
3-4 tablespoons olive oil
optional: freshly ground black pepper, diced green onion
1/2 cup mayo
1 teaspoon minced garlic
Directions
- Preheat oven to 425 degrees and line 2 baking sheets with parchment paper. Set aside.
- Spread fries out in pans and sprinkle with cornstarch and salt. Drizzle with olive oil and toss fries until coated. Lay out flat in pan, avoiding them touching so they bake evenly.
- Place pans in oven and bake for 20 minutes or until the undersides look like a matte orange and slightly puffed up. Flip and bake and additional 13-15 minutes.
- Remove from oven and let cool slightly. Meanwhile, prepare garlic aioli. In a small bowl, add mayo and minced garlic and stir together, season with a pinch of salt and pepper.
- Serve fries with aioli and garnish with green onions, if desired. Enjoy!!
