Grilled Veggie Salad With Blue Cheese

Summer salad goals here! This grill friendly idea is so perfect for a weekend barbecue and has all the colourful and crisp veggies with loads of flavour, topped off with blue cheese because, why not? 😀 So tasty, fresh and just REALLY good! Hope you make it soon!

Grilled Veggie Salad With Blue Cheese

Ingredients

  • 2 cups cherry or grape tomatoes

  • 2 large bell peppers, red, yellow or orange

  • 1 medium white onion

  • 2 medium zucchini

  • 4 cloves garlic, roughly chopped

  • 1 sweet potato, peeled and chopped into small cubes

  • 1 tsp black fresh ground pepper

  • 1.5 tsp kosher salt

  • 1 tsp Italian seasoning

  • olive oil

  • 4 oz blue cheese

Directions

  • Prep veggies by chopping bell peppers into bite size pieces, dicing the onion, zucchini and sweet potato. Place all the vegetables into large bowl with a drizzle of olive oil, and seasoning. Toss to coat
  • Preheat grill (or skillet on stove-top) to med-high heat
  • If grilling, place all the veggies into a grill-safe pan or grilling tray sprayed lightly with non-stick spray. Place tray on barbecue and cook for approx 7-12 minutes, stirring regularly until veggies are tender-crisp and lightly charred. Remove tray from barbecue and set aside to cool slightly.
  • While veggies are still warm, drop crumbled blue cheese over top and serve immediately. Enjoy!
