Sheet Pan Citrus Chicken Chorizo with Potatoes

This easy dinner can be whipped up with little effort and can still be a beautiful, satisfying meal to serve guests. I love combining citrus and chicken- it is so refreshing, and the chorizo adds a great heat to it! Of course, I love using fresh herbs and I found parsley really complimented this one. Possibly my favorite sheet pan dinner. Enjoy!

Sheet pan Citrus Chicken and Chorizo with Potatoes

Ingredients

-2 Tablespoons olive oil -6 chicken breasts, boneless and skinless, each cut into half -1 pound chorizo sausage (or hot italian) -4-6 russet potatoes, quartered -1 red onion, sliced -1 teaspoon dried oregano -1 teaspoon onion powder -a handful of fresh parsley, chopped -salt and pepper, to taste -grated zest of 2 oranges

Directions

  1. Preheat oven to 375 degrees
  2. Coat sheet pan with olive oil, arrange chicken, chorizo and potatoes in even layer.
  3. Sprinkle the onion and oregano, onion powder, parsley and salt and pepper. Then grate the orange zest over everything.
  4. Cook for 1 hour, basting everything with the sheet pan juices half way through.
  5. Remove from oven, garnish with citrus wedge and fresh parsley, if desired. Serve!
