A family favourite, especially when the weather is cold and there’s some fresh bread to dunk.
I created this the other day using some fresh vegetables and beef I had on hand, and just a couple other very simple ingredients. This was a very easy to put together meal that required little work from me, which was welcome because it was a very busy day.

Perfect One-Pot Beef Stew

2 Tablespoons olive oil
2 lbs stewing beef
salt and pepper, to taste
2 Tablespoons all purpose flour
1 teaspoon dried thyme (or a sprig of fresh)
2 teaspoons paprika
1 teaspoon dried rosemary (or a sprig of fresh)
1 large onion, diced
4 cloves garlic, chopped
3 medium carrots, chopped
3 stalks celery, chopped
1/2 teaspoon Worcestershire Sauce
4 tablespoons tomato paste
1/2 cup tomato sauce
4 cups of beef broth (or just water)
5 white potatoes, quartered
Directions
- In a large pot, heat the olive oil over med-high heat and then add the beef. Sprinkle a little salt and pepper over beef and cook the pieces until they are browned on both sides. Sprinkle flour over the browned beef and continue to cook until carmelized. Then remove beef from pot and set aside.
- Add thyme, paprika, rosemary, onion, garlic, carrots and celery to pot and stir. Continue to cook until onions are translucent, then return the beef to the pot.
- Add Worcestershire sauce, tomato paste and tomato sauce, broth and potatoes. Stir everything together and cover pot with lid.
- Cook over low-medium heat for about an hour, or until beef falls apart when pierced with fork.
Serve with crusty bread for dipping.
