Grilled Veggie Salad With Blue Cheese

2 cups cherry or grape tomatoes
2 large bell peppers, red, yellow or orange
1 medium white onion
2 medium zucchini
4 cloves garlic, roughly chopped
1 sweet potato, peeled and chopped into small cubes
1 tsp black fresh ground pepper
1.5 tsp kosher salt
1 tsp Italian seasoning
olive oil
4 oz blue cheese
Directions
- Prep veggies by chopping bell peppers into bite size pieces, dicing the onion, zucchini and sweet potato. Place all the vegetables into large bowl with a drizzle of olive oil, and seasoning. Toss to coat
- Preheat grill (or skillet on stove-top) to med-high heat
- If grilling, place all the veggies into a grill-safe pan or grilling tray sprayed lightly with non-stick spray. Place tray on barbecue and cook for approx 7-12 minutes, stirring regularly until veggies are tender-crisp and lightly charred. Remove tray from barbecue and set aside to cool slightly.
- While veggies are still warm, drop crumbled blue cheese over top and serve immediately. Enjoy!
