Just because we’re at home all day these days doesn’t mean we’re always in the mood for making a complicated or time-consuming dinner. Right? So here’s a recipe for a super quick, almost no-prep dinner that can be on the table in a half hour. It’s definitely something my family eats regularly and I like it because you can switch it up so easily by interchanging the veggies and protein. I’ve made this same recipe with chicken and bell peppers and it turns out just as delish. Enjoy!
Ginger Beef & Broccoli Stir Fry

1 lb flank steak, cut into 3 inch strips
1 tablespoon olive oil
1 small white onion, diced
3 gloves garlic, peeled and minced
2 tsp fresh ginger, minced
1/3 cup water
1/2 cup soy sauce
1 1/2 tablespoons corn starch
4 cups broccoli florets
Cooked rice or noodles
green onion, chopped, for serving
sesame seeds, optional
Directions
- Heat olive oil in large skillet over med-high heat. Cook steak strips until just cooked through, then remove from pan and set aside on plate.
- Add the onion, garlic and ginger to the hot pan and cook until fragrant and softened, about 2 minutes.
- In a small bowl, combine the water, soy sauce and corn starch. Mix well with fork or whisk until corn starch is dissolved. Pour the soy sauce mixture into the pan with the veggies.
- Add the broccoli florets to the sauce. Place the steak strips back into the pan as well, and toss everything together until heated through and broccoli has softened a bit. Add more water if the sauce seems too thick.
- Prepare plates or bowl with rice or noodles, then top with the prepared stir fry, some chopped green onion and sesame seeds. Serve hot. Enjoy!
