German Pancakes

These fluffy and light pancakes are easy, filling and so flexible. You can use whipped cream in them with fresh strawberries or bananas, or ricotta and lemon, the options are endless.. but they always taste delish! They are so simple to make and are one of my kids favorite meals! Guten Appetit 🙂

German Pancakes

Ingredients

  • 2 eggs
  • 1/2 cup flour
  • 1/2 cup milk
  • 1 teaspoon granulated sugar
  • 1/4 tsp salt
  • pinch nutmeg
  • 2 Tbsp butter
  • 1 cup chilled heavy whipping cream
  • 4 Tbsp powdered sugar
  • 1/2 tsp vanilla extract
  • chopped bananas or other fruit
  • a few tablespoons melted nutella, to drizzle

Directions

  1. Preheat your oven to 425 degrees.
  2. In a mixing bowl, beat the eggs and then add the flour, milk, sugar, salt and nutmeg. Mix well.
  3. Meanwhile, in a medium oven-safe skillet, add butter and place in oven. When butter is melted, remove skillet from oven. Pour the batter into the hot skillet and return to oven. Bake for 15 minutes or until golden brown and puffed up.
  4. In a separate mixing bowl, combine the cream, powdered sugar and vanilla. Beat on medium-high speed until thick and soft peaks form. (Refrigerate if not using immediately.)
  5. Place pancake on a serving plate, spread the whipped cream on top and spoon bananas over it, topping with drizzled nutella. Serve!
