Brownie Cookie Cake with Dulce De Leche Topping

I couldn’t decide what to call this one since its really a mash-up of so many yummy desserts. The crisp cookie-like top layer followed by a fudgey brownie centre and the general look and shape of a cake. Seriously, so good!

Brownie Cookie Cake With Salted Dulche De Leche Topping

A mash-up of crisp and gooey chocolate desserts.

Ingredients

-5 oz unsweetened chocolate -1 cup butter, softened -2 cups granulated sugar -4 large eggs -1 1/4 cups all-purpose flour -1 Tablespoon vanilla extract -1/4 cup Eagle brand dulce de leche caramel sauce

Directions

    1.Preheat oven to 325 degrees. Generously spray 9-inch round cake pan with nonstick baking spray. 2. Place chocolate in a microwave safe bowl and melt in 30 second intervals, stirring each time. Set aside to cool. 3. Add butter and sugar to bowl of stand mixer fitted with paddle attachment. Cream together until light and fluffy.
  1. Add eggs, one at a time, beating well after each addition. Drizzle in the melted chocolate. Mix until combined.
  2. Add the flour and vanilla extract Mix until combined, scraping down sides of bowl when necessary. Spread batter into greased pan. Drizzle a tablespoon of the caramel sauce on top of batter.
  3. Bake for 50-60 minutes, until center is almost set. Let cake cool and top with ice cream, more dulce de leche sauce and a sprinkle of kosher salt.
