3 cups granulated sugar
2 cups brown sugar, packed
1 1/2 cups corn starch
1 1/2 tsp nutmeg
3 tsp cinnamon
1 tsp ground cloves
1 tsp salt
9 cups water
4 Tablespoons lemon juice
6 quarts of apples, peeled, cored and chopped
Directions
- In an extra large pot combine all the dry ingredients, whisk well.
- Add the water to the pot and stir again, bring to a boil over medium heat
- Add apples and lemon juice, turn heat to Low and simmer for about 20 minutes.
- Cool apple filling to room temperature and transfer to airtight containers to refrigerate. The mixture will thicken more as it cools. (Makes about 7 quarts.) Enjoy π
