This fritter-like loaf is made up of fluffy cake and layers of apple and brown sugar with a touch of cinnamon, drizzled with a delicious glaze. So yum! It’s perfect for breakfast, or dessert! Enjoy 🙂
Apple Fritter Cake Loaf
Ingredients
- 1/3 cup light brown sugar
- 1 teaspoon cinnamon
- 1/2 cup butter, softened
- 3/4 cup granulated sugar
- 2 eggs
- 1 tsp vanilla extract
- 1 1/2 cups all-purpose flour
- 2 tsp baking powder
- 1/2 cup milk
- 2 apples, chopped
- 2 Tbsp sugar
- 1 tsp cinnamon
- 3-4 Tbsp milk (for glaze- may need more or less)
Directions
- Preheat oven to 350 degrees. Coat 9X5-inch loaf pan with butter
- Mix brown sugar and cinnamon together in small bowl, set aside.
- In mixing bowl with paddle attachment, beat sugar and softened butter until creamy and smooth. Beat in eggs, one at a time. Add vanilla and mix.
- Add flour and baking powder to the creamed butter mixture and beat until blended. Mix milk in and continue mixing until batter is smooth.
- In seperate, small bowl, toss peeled, chopped apples with the 2 Tablespoons of sugar and the cinnamon.
- Pour half the batter into the loaf pan. Add half the chopped apple mixture on top of the batter and sprinkle half the brown sugar mixture on top of that.
- Pour remaining batter over apple mixture and top with remaining brown sugar mixture.
- Bake in oven for approx 1 hr 15 mins. Or until knife inserted in center comes out clean.
- Meanwhile, to make glaze, mix the powdered sugar with a couple tablespoons of milk until it reaches a drizzling consistency.
- Remove loaf from oven, let rest for about 15 minutes before transferring to a cooling rack. Drizzle with glaze and serve warm. Enjoy.
