Twice-Baked Cheesy Cajun Sweet Potatoes

2 tablespoons olive oil
5 medium sweet potatoes
2 cups grated sharp cheddar cheese
1/2 tsp Cajun spice
1/2 cup fresh cilantro, chopped
fresh ground pepper, to taste
Directions
- Preheat oven to 400 degrees and place sweet potatoes on large sheet pan, coated with olive oil. Pierce each potato with a fork a few times to release steam while cooking. Bake in oven for about 40 minutes, until fork tender.
- Remove potatoes from oven and let cool, then slice each lengthwise and carefully scoop out the soft inside and place in medium bowl, leaving the skins on the sheet pan.
- In the bowl, mash the potatoes and add the Cajun spice and 1 cup of the shredded cheese. Add the cilantro and then mix all together well. Scoop the filling back into each potato skin, pressing it in lightly with a spatula.
- Sprinkle the remaining cup of shredded cheese over each potato and place them back in the oven to melt and bubble the cheese, approx 10 minutes but longer depending on oven.
- Once cheese is melted, remove pan from oven and let cool slightly. Sprinkle a little fresh cracked black pepper over each and additional chopped cilantro, if desired. Serve and enjoy!
