Tuna Stuffed Avocado

Super, super easy low-carb snack idea here! This is a tasty, healthy and filling appetizer, snack, or quick lunch that only takes 5 minutes to make (MAX) and is really satisfying. (If you pack these in your lunch, I squeeze a little lime juice over the exposed green of the avocado to keep it from browning) Enjoy!! 🙂

Tuna Stuffed Avocado

Ingredients

  • 2 ripe avocado, halved and pitted

  • 1 can tuna, drained

  • 4 Tablespoons avocado oil mayo

  • 1/2 bell pepper, color of your choice, diced finely

  • chives or green onion, chopped, for garnish

  • 1/2 lime

  • fresh cracked black pepper

  • sriracha sauce, if desired

Directions

  • In a small bowl, mix the tuna and mayo together. Add in the chopped pepper and chives, mix well and spoon into the halved avocados.
  • Garnish with a squeeze of fresh lime, additional chives, sprinkle of black pepper and, if desired, a drizzle of sriracha sauce. Enjoy!
