Super Seed, Chocolate & PB Energy Bites

These energy bites take about 5 minutes to make, they require only a handful of pantry-staple ingredients, and they are Y-U-M. I don’t feel guilty about eating these and I don’t mind my kids having them, either- they’re full of omega-3 and omega-6 polyunsaturates, and fibre. The peanut butter and chocolate chips make them taste like cookie dough and they aren’t too sweet either, just the right amount of everything. 🙂 Enjoy!

Super Seed, Chocolate & PB Energy Bites

Ingredients

  • 4 Tbsp honey (or maple syrup)

  • 1 1/4 cups smooth peanut butter

  • 2 cups oats (I used the gluten-free Only Oats brand)

  • 1 cup dark chocolate chips

  • 3/4 cup mixed seeds (I used a PC seed blend of flax, chia, hemp, pumpkin and sunflower seeds. But you can use whichever seeds you prefer!)

Directions

  • In a medium sized mixing bowl, mix the honey, peanut butter and oats together with a wooden spoon until combined well.
  • Add the chocolate chips and seeds and mix just until combined. If desired, roll the balls in the seeds or chocolate chips when done. Serve!

Notes

  • The bites should be stored in an airtight container in the fridge and will last up to two weeks.:)
