Spicy Thai Peanut Ramen

On cold days like today I really crave some hot & spicy soup. If you are like me, this soup will be one of your faves. It has a lot of spices but is simple and smooth with those yummy ramen noodles to fill you up. I hope you love it!

Spicy Thai Peanut Ramen

Ingredients

  • 2 large cloves garlic, chopped
  • 1 medium onion, chopped
  • 1 red bell pepper, chopped
  • 2 Tablespoons peanut butter
  • 2 Tablespoons fresh ginger, grated
  • 1 Tablespoon cumin
  • 1/2 teaspoon red pepper flakes
  • 1 Tablespoon curry powder
  • 1 Tablespoon dried coriander
  • 2 Tablespoons coconut oil
  • 1 Tablespoon fish sauce
  • 5 cups chicken broth
  • 1 can coconut milk
  • 3 squares ramen noodles
  • 1 lime, zested and juiced
  • Garnish: 1 bunch cilantro, chopped, crushed peanuts, fresh parsley, chopped, toasted sesame oil and lime wedge

Directions

  1. In food processor or blender, combine garlic, onion, bell pepper, peanut butter, ginger, cumin, red pepper flakes, curry powder, coriander, coconut oil, and fish sauce. Process until a paste forms.
  2. Add the chicken stock and coconut milk to large pot and bring to a boil.
  3. Add the paste to the pot and whisk until smooth and no lumps remain.
  4. Reduce heat and simmer for about 10 minutes
  5. In the last few minutes, add the ramen and the lime juice and zest
  6. Ladle soup into bowls and garnish with chopped cilantro, lime wedge, crushed peanuts and a drizzle of toasted sesame oil, if desired. Enjoy!
