On cold days like today I really crave some hot & spicy soup. If you are like me, this soup will be one of your faves. It has a lot of spices but is simple and smooth with those yummy ramen noodles to fill you up. I hope you love it!
Spicy Thai Peanut Ramen
Ingredients
- 2 large cloves garlic, chopped
- 1 medium onion, chopped
- 1 red bell pepper, chopped
- 2 Tablespoons peanut butter
- 2 Tablespoons fresh ginger, grated
- 1 Tablespoon cumin
- 1/2 teaspoon red pepper flakes
- 1 Tablespoon curry powder
- 1 Tablespoon dried coriander
- 2 Tablespoons coconut oil
- 1 Tablespoon fish sauce
- 5 cups chicken broth
- 1 can coconut milk
- 3 squares ramen noodles
- 1 lime, zested and juiced
- Garnish: 1 bunch cilantro, chopped, crushed peanuts, fresh parsley, chopped, toasted sesame oil and lime wedge
Directions
- In food processor or blender, combine garlic, onion, bell pepper, peanut butter, ginger, cumin, red pepper flakes, curry powder, coriander, coconut oil, and fish sauce. Process until a paste forms.
- Add the chicken stock and coconut milk to large pot and bring to a boil.
- Add the paste to the pot and whisk until smooth and no lumps remain.
- Reduce heat and simmer for about 10 minutes
- In the last few minutes, add the ramen and the lime juice and zest
- Ladle soup into bowls and garnish with chopped cilantro, lime wedge, crushed peanuts and a drizzle of toasted sesame oil, if desired. Enjoy!
