Soft pretzels are really the best. They’re awesome as a snack in-between meals and can be packed into lunchboxes no problem. I made two batches of these recently and they were all snatched up as soon as I put them out. I love the soft chewy dough and the melted butter and sesame seeds make them so undeniably delicious. Will definitely make these again this week, just writing about them is making me want to get back in the kitchen so I can have one right now! Hope you enjoy!! 🙂
Soft Beer Pretzels
Ingredients
- 6 oz warm water
- 1 Tablespoon sugar
- 1 Tablespoon yeast
- 6 oz beer (I used Guinness)
- 2 oz olive oil
- 1 teaspoon salt
- 4-5 cups all-purpose flour
- 2 Tablespoons baking soda
- 3 oz water
- kosher salt or sesame seeds
- melted butter for brushing on pretzels
Directions
- Add warm water to stand mixer with dough hook attached, dissolve sugar and add yeast. Wait ten minutes until foamy.
- Add the warm beer, olive oil and salt
- Add the flour one cup at a time on low speed, until dough pulls away from sides
- Increase mixer speed and and let knead about 4 minutes -5. In a clean bowl, spray with cooking spray and form the dough into a ball and place in the bowl, turning once to coat in oil
- Use plastic wrap to cover and place a tea towel over top, allow to rise for about an hour or until dough has doubled in size.
- Preheat oven to 450 degrees F
- Prepare a baking sheet with non stick cooking spray
- Shape pretzels. Turn the dough onto a lightly floured surface and divide into 8 pieces. Platten each piece into a rectangle and then roll out into ropes. Pinch seams together, then stretch the dough out into a 24 inch rope, bringing the two ends of the rope up to form a “U“ shape. Twist the two end pieces around each other once, then cross the end pieces back down to the bottom of the U to complete the pretzel shape.
- Brush each pretzel with a baking powder/water mixture using a pastry brush
- Bake for 12 minutes or until browned. Keep an eye on them as ovens vary in temperature. You want them a rich pretzel brown.
- Remove from oven and use pastry brush to coat each pretzel in melted butter. Sprinkle with kosher salt or sesame seeds. Enjoy!
