Skillet Hawaiian BBQ Pizza

I came up with this super simple pizza idea one afternoon when I haphazardly threw it together for my kids lunch. My son loves pineapple- he loves any fruit, really. And all of my kids love bacon. Who doesn’t! This pizza is pretty appealing to kids of all ages, lets face it. It couldn’t get any easier! I hope you enjoy 🙂

Skillet Hawaiian BBQ Pizza

Ingredients

  • extra virgin olive oil
  • 1 8-inch whole wheat or flour tortilla
  • 2 Tbsp BBQ sauce
  • 1 cup shredded white cheddar
  • 1/2 cup cherry tomatoes, halved
  • 4 slices bacon, cooked and crumbled
  • 1/2 cup pineapple, chopped into pieces
  • handful of baby arugula
  • kosher salt and fresh ground pepper

Directions

  1. Preheat the broiler to high with a rack set on the top third of oven.
  2. In large oven-safe skillet, heat a drizzle of olive oil over high heat. When it shimmers, add the tortilla to the skillet. Tortilla will puff up a bit in the skillet- easiest pizza crust ever! Spread on BBQ sauce and add the shredded cheese, tomatoes, bacon and pineapple.
  3. Transfer the skillet to oven and broil 1-2 minutes, or until cheese is melted and bubbly. Watch closely- this will happen fast! Remove from oven and carefully slide pizza off skillet onto plate.
  4. Top pizza with arugula, fresh cracked pepper and kosher salt. Enjoy!
