Simply White Chocolate Cheesecake

Ingredients

  • 2 1/2 cups crushed graham crackers

  • 3/4 cup butter, melted

  • 2 1/2 cups softened cream cheese

  • 1 cup plain Greek yogurt

  • 1/2 cup granulated sugar

  • 2 tbsp cornstarch

  • 2 tsp pure vanilla extract

  • 3 large eggs

  • 1 3/4 cups quality white chocolate, melted

  • Optional: additional shaved white chocolate for garnish (or raspberries) with caramel drizzle or dulce de leche

Directions

  • Preheat oven to 350 degrees and line springform pan with parchment (or grease with butter)
  • In a medium bowl, combine the crushed crackers and butter until a wet sand consistency. Press firmly into the bottom and edges of the springform pan and bake for 10 minutes. Remove from oven and cool.
  • In a large mixing bowl, beat the cream cheese and yogurt together until smooth.
  • Separately, whisk together the sugar and corn starch, then add it to the cream cheese mixture and beat until combined well.
  • Add the vanilla and eggs, one at a time, mixing well between each until batter is smooth.
  • Add the melted white chocolate and mix again.
  • Reduce oven temperature to 290 degrees.
    Pour the batter over the crust, scraping down sides of bowl to ensure you get all the batter. Smooth out the top with spatula.
  • Bake for approx 1 hour 10 minutes, or until edges are set and lightly golden and centre of cake is still a bit wobbly.
  • Turn oven off and leave door ajar until cake is cooled to room temperature. Transfer to fridge and let sit overnight or at least a few hours until completely cool.
  • Remove from springform pan and decorate if desired, slice and serve!
