These pretzels are my current obsession. They aren’t scary to make, either. 😉 Not too salty and SO fluffy and chewy at the same time, they are just amazing. Shape them as typical pretzels as instructed or be a little fancy and make heart shapes 😛 I like to serve them either the same day or freeze them in an airtight zip lock or container right away, they freeze awesome so they’re perfect to pop out of the freezer to throw in lunch boxes or to have anytime you want. I hope you love them!
Everything Soft Pretzels
Ingredients
- 1 1/2 cups water
- 1 Tbsp sugar
- 2 tsp salt
- 1 envelope active dry yeast
- 5 cups all-purpose flour
- 1/2 cup olive oil
- 10 cups boiling water
- 1/4 cup baking soda
- 1 egg
- pinch of salt
- “everything but the bagel” seasoning blend from Trader Joe’s
Directions
- In stand mixer, combine warm water, sugar, salt and yeast. Wait about 10 minutes until frothy, then add the flour and oil. Mix on low for about 5 minutes until well combined and the dough is smooth.
- In a lightly oiled bowl, place the dough and cover with damp tea towel. Let rise in a warm place for about an hour, until doubled in size.
- Preheat the oven to 425 degrees. Spray a large sheet pan with non stick spray and set aside.
- In large pot, boil about 10 cups of water and then add the baking soda to the boiling water.
- On floured surface, roll dough into ball and cut into 8 portions. Roll each portion into a 24-inch rope and twist into a pretzel knot. Hold each rope by ends and twist upwards and around to form a pretzel, with ends facing outward at bottom. Pinch the dough at seams lightly to hold together and then place each pretzel into the boiling water, one by one, for 30 seconds per side. Do not crowd the pot, I only boiled 1-2 pretzels at a time. Transfer the pretzels to the prepared baking tray.
- In separate, small bowl, whisk 1 egg with a pinch of salt and tablespoon of water. Brush each pretzel with the egg wash and then sprinkle with everything bagel seasoning blend.
- Bake in oven for about 15 minutes, until rich deep brown color.
- Remove from oven and transfer to wire rack. Serve warm. 🙂
