minutesIngredients
Whole salmon fillet
Salt and fresh ground pepper
2 tsp olive oil
2 garlic cloves, minced
1/4 cup chicken broth
2 lemons, freshly squeezed
1/4 cup butter, diced into cubes
1/2 tsp honey
small bunch of fresh parsley, minced
asparagus, or other vegetable of your choice
Directions
- Preheat oven to 375 degrees and prepare large sheet pan with a drizzle of olive oil, then place salmon fillet on pan to rest
- To prepare sauce, heat 1 tsp butter in small saucepan over low heat, until melted, then add garlic and saute for about 2 minutes. Pour in the chicken broth and lemon juice. Let sauce simmer until it is reduced by about half. Then, stir in the butter and honey and whisk until combined.
- Season salmon with a sprinkle of salt and pepper, and add any vegetable to surround salmon on pan (I used asparagus- small potatoes are also a great option). Drizzle half the butter mixture over the salmon and place pan in oven to bake for about 20 minutes, until it flakes easily and internal temperature reaches 145F degrees. (I like to turn the oven to broil for the last couple minutes of cooking to give the salmon a slightly darker, richer hue. If you do this just eye it closely!)
- Remove pan from oven and plate salmon on serving dishes, with sides of your choice. Drizzle the remaining butter mixture over each salmon filet and sprinkle with fresh parsley. Serve immediately and enjoy!
