Peaches are in season! And they are probably my favorite fruit. Top 5, at least. These yummy pastries are SO good, and my favorite thing about them is that they actually aren’t too sweet. The cream cheese really balances them out and they’re a perfect treat for breakfast. Enjoy! 🙂
Peaches & Cream Cheese Galettes With Cinnamon Sugar

1 sheet frozen puff pastry, thawed
4 oz cream cheese
1 lb ripe peaches, pitted and cut into 1/2 inch wedges
1/4 cup sugar
1 Tablespoon lime juice
1 Tablespoon corn starch
1 pinch salt
1 Tablespoon unsalted butter, diced into small pieces
1 teaspoon cinnamon
1/4 cup granulated sugar
Vanilla ice cream, to serve (optional)
Directions
- Preheat oven to 425 degrees and line large sheet pan with parchment paper
- Cut pastry puff into six 4 1/2” circles, you should have just enough dough. (I used a bowl to create my circles)
- Pierce each pastry with a fork multiple times, then place 2 slices of thinly sliced cream cheese over the middle of each.
- In a medium sized bowl, place all the sliced peaches. Then, add the sugar, lime juice, corn starch, salt and butter. Gently stir the peaches until they are evenly coated. Place the peaches over the cream cheese in each pastry, then fold the dough up around all the edges to contain everything.
- Bake in the oven for approx 20 minutes, until pastries are golden brown and the peaches are soft. Remove from oven and mix the sugar and cinnamon in a small bowl, then sprinkle over each hot pastry. Let cool slightly and top with a scoop of ice cream, if desired. Serve!
