One-Pot Rustic Chicken Soup

This is the ultimate cold-weather soup as the days are slowly becoming chillier. It’s hearty, healthy and super easy as it’s all thrown together in one pot. A comforting bowl of this savory and delicious soup is the perfect way to enjoy this turn of seasons. It’s also perfectly acceptable to throw in some other variety of vegetables if that is what you have on hand. Improvise and enjoy! 🙂

One-Pot Rustic Chicken Soup

Ingredients

  • 4 chicken breast, trimmed and cut into 2-inch chunks

  • 2-3 Tablespoons olive oil

  • Approx 5 medium carrots, peeled and sliced into 1/4 inch pieces

  • 1/2 white onion, diced

  • 5 garlic cloves, minced

  • 5-6 cups chicken broth

  • 2 Tablespoons all-purpose flour

  • 2-3 bay leaves

  • 5-6 russet potatoes, cut into bite-size pieces

  • kosher salt and fresh ground pepper

Directions

  • In a large pot over med-high heat, heat olive oil and add the chicken. Sprinkle with salt and pepper. Cook until browned all over and white throughout inside. Remove from pot and set aside on plate.
  • Add carrots, onion and garlic to pot. Cook just until onion is softened and garlic is fragrant. Add a cup of chicken broth and scrape bottom of pot to remove any bits of browned chicken.
  • In a separate bowl, whisk together flour and a cup of broth, then add to pot. Add the chicken, potatoes and all the remaining broth. Then add bay leaves and season with salt and pepper to taste. Reduce heat to med-low and simmer for approximately 45 minutes, until potatoes are soft.
  • Remove bay leaves and serve soup hot, with a side of crusty bread. Enjoy!
