These fun little muffins are the perfect grab-and-go snack for the kids (and parents, too!) And they’re also great as part of a quick breakfast. You can also rest assured they’re made with healthy, pronounceable ingredients unlike some of the enticing looking snacks that we see on store shelves.
They keep well in a sealed Tupperware in the fridge and my kids love these after school.

Nutty Banana Apple Mini Muffins

1 large ripe banana
1 egg
1 cup all purpose flour
1/2 teaspoon baking powder
1/2 cup unsweetened applesauce
1/2 cup almond milk
1 tsp chia seeds
1/4 cup mini semi-sweet chocolate chips
1/2 cup crushed walnuts
Directions
- Preheat oven to 350 degrees
- in a large mixing bowl, mash the banana and add the egg and combine
- Slowly add the flour and baking powder, mix gently to combine
- Add apple sauce, almond milk and chocolate chips. Mix.
- Spoon batter into lightly greased 24-count mini muffin pan, about 3/4 full each, then sprinkle walnuts bits over top
- Bake for 17-18 minutes, or until toothpick inserted in centre comes out clean. Let cool completely before transferring. enjoy! : )
Notes
- You can also make 12 regular sized muffins with this recipe by adjusting the baking time to about 22 minutes.
