Mini Key Lime Pies

Ingredients

  • 1 1/2 cups graham cracker crumbs

  • 1/2 cup butter, melted

  • 2 cans (14 oz) sweetened condensed milk

  • 1 cup plain greek yogurt

  • 3/4 cup key lime juice

  • 2 limes, zested

Directions

  • Preheat oven to 350 degrees. Place muffin liners into 12-muffin tinned set aside.
  • In a medium sized bowl, combine the crumbs and melted butter and stir until coarse crumbs form. Drop about 1 1/2 tablespoons of crumbs into each muffin liner and using your fingers, press crumbs down to form a little crust.
  • In a separate mixing bowl, combine the condensed milk, yogurt and lime juice and zest. Mix well. Drop spoonfuls of the filling over the crusts until muffin liners are nearly full.
  • Bake in oven for 8-10 minutes, until tiny bubbles start to appear around edges. Remove from oven and allow to cool before pulling pies out by the edges of the liners and place on a plate to serve, or store in fridge for later. Enjoy!
