You know those recipes with the long, complicated sounding names that make you wish you had the time to make it but you just don’t- Well, this isn’t one of them. It’s a super easy salmon marinade recipe, and a salsa that is basically just a glorified salad.. takes 5 minutes to throw together! I am really loving how summery and fresh this meal is and I guarantee you will, too. If you happen to have salmon on hand, or even if you don’t and you want to run out and get some right now, this can be on your plate for dinner within a half hour! Mediterranean Seared Salmon & Avocado Feta Salsa Fresca

4 salmon fillets, skinned
olive oil
1 tsp paprika
1/2 tsp chili powder
1/2 tsp ground ginger
1/2 tsp garlic powder
1/2 tsp ground cumin
1/2 tsp granulated onion
1/4 tsp kosher salt
sprinkle of fresh ground pepper
1/2 lemon, zested
Salsa: 1 cup cherry tomatoes, quartered
1/2 a cucumber, chopped into bite-size pieces
1/2 red onion, diced
1 cup fresh cilantro
1 tablespoon lime juice
1 tsp olive oil
kosher salt
1/2 cup feta cheese, roughly chopped
Directions
- In large bowl, place salmon fillets and drizzle with olive oil. Then, sprinkle all the spices on top, including the lemon zest. Toss fillets gently to coat evenly. Cover and chill, allowing to marinate 20 minutes at the least, or overnight.
- Meanwhile, prepare the salsa. Add the chopped tomatoes, cucumber, onion and cilantro to medium sized bowl. Add the squeezed lime juice, a drizzle of olive oil and a sprinkle of kosher salt. Mix well. Crumble the feta over the salsa. Set bowl aside.
- In large cast iron skillet over med-high heat, add the salmon fillets and sear on each size for approximately 4 minutes each, until golden brown and cooked through. Remove from skillet and divide portions onto serving plates. Top with generous spoonfuls of the salsa. Serve immediately. Enjoy!
