Matcha Cake

Waking up and realizing it was Saint Patrick’s Day, I knew there would be something green on the menu today. This cake is moist and delicious and the matcha adds the perfect touch of color and flavor to make it unique. It is perfect with a cup of tea for breakfast or anytime during the day you can sneak a break. I’ll definitely be making this cake again long before next St. Patty’s Day! Enjoy!

Matcha Cake

Ingredients

  • 2 cups flour
  • 1 tsp salt
  • 3 Tbsp matcha powder
  • 1 cup butter, softened
  • 1 1/2 cups sugar
  • 3 eggs
  • 2 tsp vanilla extract
  • 1 cup almond milk
  • 1 cup powdered sugar
  • 3 Tbsp cream or whole milk
  • additional matcha powder, for dusting cake

Directions

  1. Preheat oven to 350 degrees. Grease a loaf pan with butter and set aside.
  2. In a medium bowl, mix flour, salt and matcha powder
  3. In stand mixer, using paddle attachment, cream together the butter and sugar until fluffy. Slowly incorporate eggs, mixing between each one.
  4. Add the dry ingredients and the almond milk, alternatively, until all incorporated in batter.
  5. Pour batter into prepared baking dish and bake for approx. 1 hour, or until knife inserted near center comes out clean.
  6. To prepare icing, mix the powdered sugar and cream with a whisk in a small bowl. Adjust amount of milk or cream to provide desired consistency.
  7. Remove cake from oven, cool and spoon icing over top, smoothing with spatula. Dust matcha powder over loaf. Slice and serve warm. Enjoy 🙂
