Lazy Lasagna Crockpot Beef Bolognese

Slow cooked beef bolognese sauce over thick lasagna noodles with a generous dollop of ricotta makes this easy dinner a big hit! This beef bolognese sauce is so good! My kids loved it and I will definitely be putting this on the weekly rotation. Sprinkle with a little ground pepper and fresh basil and it’s just perfect. Enjoy!

Ingredients

  • 1 package lasagna

  • 1 lb lean ground beef

  • 2 15 oz cans tomato sauce

  • 2 cups finely diced tomatoes

  • 1 12 oz can fire roasted tomatoes

  • 1 lemon, zested

  • 1 Tbsp butter

  • 1 cup heavy cream

  • 2 bay leaves

  • 6 cloves garlic, minced

  • 1 large white onion, diced

  • 1 dash nutmeg

  • 2 cups ricotta cheese

  • fresh ground pepper

  • fresh basil, for serving

Directions

  • In large skillet, place beef and cook until browned, crumble and transfer cooked beef to crock pot
  • Add tomato sauce and tomatoes to the beef, mix well, then add the zested lemon, butter, cream, bay leaves, garlic, onion and nutmeg. Give a gentle stir and allow to cook on low for 4-6 hours.
  • In separate large pot, cook lasagna noodles according to package directions.
  • Place cooked lasagna into serving bowls, top with a generous portion of the beef bolognese, then dollop ricotta over the sauce. Sprinkle fresh ground pepper over pasta and garnish with fresh basil, if desired. Enjoy!
