Jackfruit Tacos

Here’s a great taco recipe that’s simple, delicious and healthy, too. I love that we can add this to our meal rotation as a new “meatless” option as it’s vegan and it’s super flavorful and tasty, even for the kids. I use the Kosa Foods brand of young, unripe jackfruit and it’s really easy to prepare, this whole meal can be on the table in a half hour- that’s a big bonus in my book because dinner prep can be so hectic for me sometimes with all the kids running around, antsy and hungry. I hope you get a chance to try this one tonight and let me know how you like it! Enjoy 🙂
