Here’s a great taco recipe that’s simple, delicious and healthy, too. I love that we can add this to our meal rotation as a new “meatless” option as it’s vegan and it’s super flavorful and tasty, even for the kids. I use the Kosa Foods brand of young, unripe jackfruit and it’s really easy to prepare, this whole meal can be on the table in a half hour- that’s a big bonus in my book because dinner prep can be so hectic for me sometimes with all the kids running around, antsy and hungry. Jackfruit Tacos

2 cans young, unripe jackfruit from Kosa Foods, rinsed and strained
1 Tablespoon chili powder
1 Tablespoon garlic powder
1 teaspoon salt
1 Tablespoon cumin
1 teaspoon smoked paprika
1 teaspoon onion powder
2 cups corn, fresh or frozen and thawed
1 cup sweet peppers, diced
handful of fresh cilantro, chopped
1/2 red onion, diced
juice of one lime
avocados, sliced to serve on top of tacos
corn tortillas, warmed
Directions
- Heat a little olive oil in a large skillet and add the jackfruit, saute for a few minutes until it starts to lightly brown.
- Combine all the spices in a small bowl and stir to mix, add about half the mixture to the jackfruit and stir again to coat. Reserve rest of spice mix to adjust to taste later.
- Add the vegetables to the pan and the chopped cilantro, stir until veggies are tender and heated through. Add more spice mix, if desired, and continue to stir.
- Arrange tortillas to to be filled and scoop a generous amount into each one, then squeeze fresh lime juice over and top with sliced avocado, additional fresh cilantro and a sprinkle of fresh ground pepper. Enjoy!
