Barbecuing this amazing marinated chicken is a delicious dinner choice to make any weeknight. The chicken is juicy and full of flavor, and goes amazingly with the charred pineapple. I like to serve this with cauliflower rice but you could make any side to go along with it, whatever is easiest for you. This dinner is a great variation from burgers on the grill and is a beautiful and healthy-ish option, too. Enjoy!
Hot Honey Pineapple Grilled Chicken & Cauliflower Rice

2 cups cauliflower florets, chopped (including stems)
olive oil and salt & pepper, to taste
1 pineapple, skin and core removed, cut into rounds for grilling.
6 chicken breasts, trimmed
1/4 cup coconut aminos
1/4 cup tomato paste
1/4 cup water
2 tsp garlic powder
2 tsp chili powder
1 tsp smoked paprika
salt and pepper
1/2 cup honey
1 jalapeno pepper, thinly sliced
1 lemon, juiced
green onions, chopped
Directions
- In large bowl, mix the coconut aminos, tomato paste, water, garlic powder, chili powder and paprika. Stir well and add the chicken, flipping to coat both sides evenly. Marinate in fridge for 20 minutes-1 hour.
- To prepare cauliflower rice, add cauliflower to food processor and pulse 10-15 times, until pieces are rice-size. Heat olive oil in large skillet and cook cauliflower for about 5 minutes, until al dente, seasoning with a little salt and pepper. Set aside on serving plates.
- Meanwhile on barbecue, over medium-high heat, place chicken to cook for about 7 minutes per side, until no pink remains inside and the outside in lightly charred. Remove chicken from grill and set aside. Then, place pineapple on grill just until soft and grill marks appear. Remove from barbecue and place on serving plates with rice.
- To prepare hot honey, simmer honey in small pot on stove top over medium heat with chopped jalapeno, until it starts to bubble. Remove from heat and add a squeeze of fresh lemon juice. Drizzle honey over the chicken. Sprinkle diced green onion over chicken and rice, and serve! Enjoy.
