This warm and comforting soup is great any time of year, summer being no exception. It smells delicious as it simmers and is perfect for dinner with a side of crusty bread. My husband enjoyed this as his lunch for work and my kids liked it, too. Win. 🙂 Enjoy!
Healthy Chicken Broccoli Soup

1 cup carrots, finely chopped
4 cloves garlic, minced
2 celery stalks, chopped
6 cups chicken broth
2 cups milk
1.5 lbs chicken, cooked and shredded
1 cup peas, fresh or frozen
5 cups broccoli, chopped
2 tablespoons corn starch, dissolved into 2 tablespoons water
1-2 bay leaves
1 tablespoon dried italian seasoning
1 tablespoon lemon juice
salt and pepper
Directions
- In a large pot with a few tablespoons of olive oil, cook the carrots, garlic and celery just until fragrant and starting to brown. Add the chicken broth and milk and simmer.
- Add chicken, peas and broccoli. Add bay leaves, italian seasoning and the corn starch mixture. (Add more or less corn starch depending on how thick you want the soup- Or you may also remove a third of the vegetables and puree them to thicken the soup)
- Add lemon juice and salt and pepper, to taste. Simmer soup for 10-20 minutes over medium-low heat. Serve warm. Enjoy
