This is a killer summer pie, especially if you choose to freeze it! It tastes like Reese’s Pieces ice cream and the creamy, fluffy filling is just so perfect on a hot summer day. Practically no-bake (except the crust, but you could always buy the pre-made graham pie crust as well), this pie is quick to prepare. I decided to make it last night before bed so it would be good to go by the time I woke up… And I may have taste-tested it for breakfast. I have a feeling I’ll be making this again very soon as I doubt this pie will last very long 😛 Enjoy!
Frozen Peanut Butter & Chocolate Chip Pie

1 1/2 cups graham cracker crumbs
1/4 cup unsalted butter, melted
8 oz cream cheese
1 cup creamy peanut butter
1 cup powdered sugar
1 teaspoon vanilla extract
1 1/2 cups whipping cream
1 cup mini chocolate chips
Directions
- Preheat oven to 350 degrees
- In a medium bowl combine cracker crumbs and butter, stir to combine until crumbs form. Press mixture into a 9 inch pie plate, pressing up the sides. Bake for 10 minutes ten remove from oven and let cool.
- In a stand mixer with paddle attachment, beat the cream cheese and peanut butter until pale and creamy, then add the powdered sugar and vanilla. Beat another minute or two until smooth and fluffy.
- In a medium bowl, whisk the whipping cream until soft peaks form. Fold the whipped cream into the peanut butter mixture, then add the chocolate chips and fold a few more times until combined. Using spatula, transfer all the filling into the pie crust.
- Freeze until set and then it’s ready to eat! (Or, you can refrigerate if you prefer a soft gooey filling) Enjoy 🙂
