I love meals that require minimal dishes. One pan for a complete dinner sounds good to me! This has loads of flavor and I love that quinoa is a complete protein source and is such a great food for energy! I have no problem serving this awesome meal to my family and getting them to clean their plates. Enjoy!
Easy Skillet Chicken, Quinoa & Spinach
Ingredients
- 4 boneless chicken breasts
- 1 fresh sprig rosemary, chopped
- 1/2 teaspoon paprika
- 1/2 teaspoon salt
- 1/2 teaspoon ground pepper
- 2 Tablespoons olive oil
- 1 yellow onion, chopped
- 2 garlic cloves, minced
- 1 cup quinoa
- 2 cups chicken broth
- 2 cups baby spinach
- salt and pepper, to taste
Directions
- Sprinkle half the rosemary, paprika and salt & pepper on the chicken, flip and repeat with other side.
- Heat 1 Tablespoon olive oil on large skillet set over med-high heat. Add the chicken and cook until no longer pink in center, about 7 minutes per side. Transfer chicken from skillet to a plate.
- Heat the remaining olive oil in skillet. Add onion and garlic, cook until soft and fragrant.
- Stir the quinoa and broth into the pan. Bring to boil, reduce heat and simmer for 20 minutes. Add spinach and stir to combine. Then, position the chicken breast back into the pan, nestled into the quinoa. Cook (covered) an additional 10 minutes or until liquid is completely absorbed.
- Season to taste and serve!
