An easy to prepare, kind of “cheat” dessert for when you’re low on time and need something pretty and delicious! 😀 Or when you have all the time in the world and just want to make a yummy cheesecake with no oven time. Easy No-Bake Lemon Cheesecake

2 cups graham crackers, crushed
1/2 cup butter, melted
1 package lemon jello
8 oz package cream cheese, softened
1 can evaporated milk
1 lemon, juiced and zested
1/4 cup sugar
whipped cream for topping
Directions
- Combine crackers and butter in medium bowl and then press firmly into bottom of 9 inch spring form pan. Chill in fridge for about an hour to set.
- Dissolve jello in a 1/2 cup of hot water and set aside to let thicken a bit
- In mixing bowl, beat cream cheese until smooth and then add the sugar and lemon juice and zest. Pour in the evaporated milk and continue mixing until smooth. Then, add the jello and mix until combined.
- Pour mixture into the prepared pan and place in fridge to set (at least 2 hours) When ready to eat, remove from fridge and spread a layer of whipped cream on top, then slice and serve! Enjoy
