Walnut Chocolate Chunk Banana Bread

This banana bread is really the best. I love having a loaf in the freezer to thaw quick for an easy breakfast. My kids, and husband, inhale this bread. I really think it will be your new favourite! Enjoy!

Ingredients

  • 3 ripe bananas

  • 2 eggs

  • 1/2 teaspoon vanilla

  • 1/2 cup extra light olive oil

  • 1/4 cup honey

  • 2 cups flour

  • 1 teaspoon baking soda

  • 1/4 teaspoon salt

  • splash of milk

  • 1 1/2 cups semi-sweet chocolate chips

  • 1/2 cup chopped walnuts

Directions

  • Preheat oven to 325 degrees and spray a loaf pan with non-stick spray
  • Mash bananas and then add the eggs, vanilla, oil and honey. Combine well.
  • Sprinkle in the dry ingredients and stir together, mixture will be dry and chunky so add a little milk to the batter, you’ll only need a few tablespoons. Then stir in the chocolate chips and nuts.
  • Pour into loaf pan and bake until knife inserted in centre comes out clean, about 1 hour. Enjoy!
