Crushed Garlic & Basil Potatoes with Feta

These potatoes make a great side to almost any main dish. They aren’t your classic potatoes. Lively and fresh, the basil and feta really give the potatoes the boost they need. I cannot wait for summer just to make these to go alongside anything we cook on the grill!

Crushed Garlic & Basil Potatoes with Feta

Ingredients

  • 2 lbs mixed potatoes, halved
  • 4 Tablespoons olive oil
  • 1-2 cloves garlic, minced
  • kosher salt and pepper
  • 2 Tablespoons grated parmesan cheese
  • 2 Tablespoons fresh basil, chopped
  • 4-6 oz feta cheese, sliced or crumbled

Directions

1. Preheat oven to 425 degrees F
2. On cast iron skillet, toss together potatoes, olive oil and a little salt and pepper. Arrange potatoes in even layer.Transfer to oven and roast about 20 minutes or until they are tender enough to pierce with fork.
3. Remove from oven and use a fork to gently crush the potatoes to about a half inch thickness.
4. In separate bowl, combine 2 Tablespoons olive oil with the garlic and basil. Spoon mixture over potatoes and season with salt and pepper. Sprinkle parmesan over top.
5. Return potatoes to oven and bake another 25 minutes or until golden and crisp.
6. Remove from oven, top with feta and serve!
