This cozy Spinach & Sausage Gnocchi is the definition of comfort food. It’s all made in one pan, which is a big deal for me because I hate the usual after dinner clean-up. It’s so tasty and simple to throw together. Definitely making this regularly around here when I have a craving for something that hits the spot and tastes this good.

Creamy Spinach & Sausage Gnocchi

16 oz. mild Italian sausage
2 tsp olive oil
1/2 yellow onion, chopped
3 tsp minced garlic
1 cup chicken broth
1/2 cup milk
3 cups baby spinach
1 (16 oz) package potato gnocchi
1/2 cup heavy cream
1/2 cup Parmesan cheese
Directions
- Heat oil in large skillet over med-high heat. Add crumbled sausage and cook until browned. Remove from pan and set aside on paper towel lined plate.
- Add onion to pan and cook until softened, then add garlic. Pour in the broth and milk and simmer. Add spinach to pan and cover until spinach wilts.
- Add gnocchi, tossing gently. Cover and cook approximately 5 minutes, until most of the liquid is absorbed.
- Add in the cream, parmesan and the browned sausage. Toss gently to combine it all together. Serve.
