The easiest, creamy lemon pie. Ready in a pinch and so delicious. I made this twice this week and there isn’t a crumb to be found as evidence.
With just a few ingredients you can have this sweet, yummy pie on the table within a couple hours. My kids love this one and it never lasts more than a day here. Hope you like it too. 🙂

1 1/2 cups graham crackers crumbs
1/4 butter, melted
1 cup plain greek yogurt
2 (14 oz) cans condensed milk
3 lemons, squeezed and zested
1 tsp vanilla
Directions
- Preheat oven to 350 degrees
- Combine crumbs and melted butter until coarse crumbs form. Press into bottom on 9-inch pie plate.
- In separate bowl, combine condensed milk with greek yogurt, lemon juice, and vanilla. Stir to combine well.
- Pour mixture into pie shell and bake for 8 minutes or until tiny bubbles appear on surface. Remove from oven and chill for about two hours or until ready to serve.
