Coconut Curry & Turmeric Ramen

This warm bowl of goodness is everything you need. So satisfying any time of day, I love the fresh herbs and noodles warming me up when I need a boost. Coconut Curry & Turmeric Ramen

Ingredients

  • 4 cups vegetable broth
  • 1 can coconut milk
  • 1/4 cup soy sauce
  • 2 Tablespoons fish sauce (may omit)
  • 2 Tablespoons honey (may omit)
  • 1/4 cup Thai red curry paste
  • 8 oz cremini mushrooms, diced
  • 1 onion, diced
  • 1 in fresh ginger, grated
  • 2 cloves garlic, minced
  • 3-4 squares ramen noodles
  • 1 lime, juiced
  • 3 cups fresh baby spinach
  • 1/4 cup fresh cilantro, chopped (plus more for garnish)

Directions

  1. In a large soup pot, combine the chicken broth, coconut milk, soy sauce, turmeric and curry paste. Add onion, ginger and garlic.
  2. Bring to boil over high heat, stir in noodles, lime juice, spinach and cilantro. Let sit 5 mins or until noodles are soft. Serve!
