Coconut Curry & Turmeric Ramen
Ingredients
- 4 cups vegetable broth
- 1 can coconut milk
- 1/4 cup soy sauce
- 2 Tablespoons fish sauce (may omit)
- 2 Tablespoons honey (may omit)
- 1/4 cup Thai red curry paste
- 8 oz cremini mushrooms, diced
- 1 onion, diced
- 1 in fresh ginger, grated
- 2 cloves garlic, minced
- 3-4 squares ramen noodles
- 1 lime, juiced
- 3 cups fresh baby spinach
- 1/4 cup fresh cilantro, chopped (plus more for garnish)
Directions
- In a large soup pot, combine the chicken broth, coconut milk, soy sauce, turmeric and curry paste. Add onion, ginger and garlic.
- Bring to boil over high heat, stir in noodles, lime juice, spinach and cilantro. Let sit 5 mins or until noodles are soft. Serve!
