Cinnamon Swirl Honey Brioche

Flaky, sweet bread with a hint of cinnamon and honey. This brioche loaf is the best for breakfast, or anytime! It can be used to make the most amazing french toast, or served toasted with additional cinnamon and sugar for a really yummy treat. Enjoy! 😉

Cinnamon Swirl Honey Brioche

Ingredients

  • 1 cup warm water

  • 3 Tbsp honey

  • 1 Tbsp active yeast

  • 4 Tbsp olive oil

  • 3 eggs

  • 1 tsp salt

  • 4 cups flour

  • 1/2 cup warm water

  • 1/2 cup granulated sugar

  • 1 tsp cinnamon

  • 1/2 cup butter, softened

  • 1 egg, for brushing dough

Directions

  • In stand mixer with dough hook attachment, add warm water and honey. Let dissolve and add the yeast. Let sit about 10 minutes, until foamy.
  • Add olive oil, eggs, and salt. Mix on low just until combined.
  • Slowly add the flour, until dough pulls from sides. Add more flour if dough is too sticky. Mix on low about 5 minutes, until glossy and no longer overly sticky.
  • Place dough in lightly oiled bowl and cover with damp tea towel. Let rise for 1 hour.
  • Punch dough down and cut dough in half, for making two loaves.
  • Roll half of dough out onto floured surface, into a long rectangular shape. Spread the softened butter over the whole dough surface and then combine cinnamon and sugar and sprinkle mixture on top.
  • Starting at long end of rectangle, start tightly rolling the dough up into a roll. Grease a loaf pan with butter or oil, then place the roll into the pan, seam-side down. Repeat process with other half of dough and let loaves rise for 1 more hour.
  • Preheat oven to 350 degrees. Beat egg in small bowl and brush it over the tops of the dough before placing them in preheated oven. Bake for 20-30 minutes or until rich golden brown on top.
  • Remove pans from oven and allow to cool slightly, then carefully remove by inserting butter knife along edges of pan and flipping upside down onto a cooling rack. Cool loaves and then slice and serve warm. Enjoy!
