Chocolate Oatmeal Drop Cookies

It’s finally hot here in Montreal after weeks of everyone complaining about the weather being too cold. And I spent all morning outside in the sun watching my kids play in the pool so, needless to say, I don’t want to be turning on the oven today unless absolutely necessary. I think you know what’s coming now… No-Bake Cookies, obviously! 😉 Yeah, these are good ones! I also hope you appreciate that they are egg-less and contain no flour so to make them GF you just need to use gluten-free oats and voila! Easy Peasy and super yummy. I keep these in the fridge and find they are best a day or two after you make them, they get harder and more fudgey… yum. Okay, go make them now and then go enjoy this beautiful weather!

Chocolate Oatmeal Drop Cookies

Ingredients

  • 2 cups granulated sugar

  • 1/2 cup milk

  • 1/3 cup cocoa powder

  • 1/2 stick of butter (about 4 tablespoons)

  • 1/2 cup smooth peanut butter

  • 1 teaspoon vanilla extract

  • 3 cups quick oats

Directions

  • In a large pot over medium-high heat, mix together the sugar, milk, cocoa powder and butter. Bring to a boil and simmer for one minute. Remove from heat.
  • Add peanut butter and vanilla and stir until peanut butter has melted. Add the oats and mix well. (You may need to add a little more or less oats depending on how the consistency looks.)
  • Drop spoonfuls of the oat mixture onto a tray lined with wax paper. Allow cookies to cool completely and then serve. Enjoy!
