Perfect little lemon bars with a shortbread cookie crust, chewy lemony filling and topped with a sweet glaze. I made these a couple days ago and they turned out almost perfect! I had to adjust my original recipe a tiny bit just to make them a bit less tangy and they are finally just right, so I hope you make them very soon and let me know how they worked for you. A perfect, sweet, early summer treat. Easy to make and just as easy to eat 😉
Chewy Lemon Butter Bars

2 cups all-purpose flour
1 cup butter
1/2 cup powdered sugar
2 cups granulated sugar
4 eggs, whisked
1/4 cup all-purpose flour
1/2 cup fresh squeezed lemon juice
1 lemon, zested
1 tsp baking powder
1 cup powdered sugar
approx 3 tablespoons of lemon juice
Directions
- Preheat oven to 350 degrees. To prepare the crust, combine the first 3 ingredients in stand mixer using paddle attachment and mix until coarse crumbs form. Press the crumbs into the bottom of a 13X9 inch pan and bake for approx. 25 mins, until a light golden brown along edges.
- To prepare filling, combine the granulated sugar, eggs, flour, lemon juice, zest and baking powder in the stand mixer and beat until smooth. Pour filling into crust and bake another 20-25 minutes, or until top is a light golden brown. Allow to cool completely while you make the glaze.
- For the glaze simply combine the last cup of powdered sugar with enough lemon juice to make it a good drizzling consistency. I used a whisk to ensure it was a nice, smooth glaze. Drizzle over the cooled bars and chill in fridge until set. Cut into bars and enjoy!
