Cheddar, Bacon & Apple Muffins

There are some things that you just know belong together. Apples and bacon are one of them. Throw in some cheese and fresh rosemary and these muffins are a match made in heaven. 🙂

Cheddar, Bacon & Apple Muffins

Ingredients

  • 2 cups all-purpose flour
  • 1 1/2 teaspoon baking powder
  • 2 Tablespoons sugar
  • 3/4 teaspoon salt
  • 1/2 teaspoon fresh black pepper
  • 6 Tablespoons butter
  • 4 sprigs rosemary, chopped
  • 1 large apple, peeled and finely chopped
  • 1/2 cup cheddar cheese, shredded
  • 6 slices bacon, cooked and crumbled
  • 1/2 cup heavy cream
  • 1 egg
  • 1/4 cup milk

Directions

  1. Preheat oven to 375 degrees and prepare 12 muffin tin with liners
  2. In mixer, combine the flour, baking powder, sugar, salt and pepper; whisk well to combine.
  3. Using large cheese grater, shred butter into dry ingredients.
  4. Using paddle attachment, add the egg, cream and milk to dry mix until sticky dough forms. Add in rosemary, then chopped apple, grated cheese, and bacon. (reserve a couple slices of bacon for garnish, if desired) Mix until all combined. Add additional milk if necessary. Dough should be sticky but not runny.
  5. Bake for 18-20 minutes or until toothpick inserted in center comes out clean. Garnish with extra bacon and fresh rosemary, if desired. Enjoy!
