There are some things that you just know belong together. Apples and bacon are one of them. Throw in some cheese and fresh rosemary and these muffins are a match made in heaven. 🙂
Cheddar, Bacon & Apple Muffins
Ingredients
- 2 cups all-purpose flour
- 1 1/2 teaspoon baking powder
- 2 Tablespoons sugar
- 3/4 teaspoon salt
- 1/2 teaspoon fresh black pepper
- 6 Tablespoons butter
- 4 sprigs rosemary, chopped
- 1 large apple, peeled and finely chopped
- 1/2 cup cheddar cheese, shredded
- 6 slices bacon, cooked and crumbled
- 1/2 cup heavy cream
- 1 egg
- 1/4 cup milk
Directions
- Preheat oven to 375 degrees and prepare 12 muffin tin with liners
- In mixer, combine the flour, baking powder, sugar, salt and pepper; whisk well to combine.
- Using large cheese grater, shred butter into dry ingredients.
- Using paddle attachment, add the egg, cream and milk to dry mix until sticky dough forms. Add in rosemary, then chopped apple, grated cheese, and bacon. (reserve a couple slices of bacon for garnish, if desired) Mix until all combined. Add additional milk if necessary. Dough should be sticky but not runny.
- Bake for 18-20 minutes or until toothpick inserted in center comes out clean. Garnish with extra bacon and fresh rosemary, if desired. Enjoy!
