These aren’t your average chicken nuggets. They’re spicy, sweet, sticky, crunchy nuggets of the gods. Seriously, they are pretty amazing. I make a big batch of these for dinner with some sweet potato fries and everyone is happy!! Most of the ingredients you probably already have on hand so maybe this is what you’ll be having for dinner tonight, too? 🙂
Cayenne Honey Chicken Nuggets
Ingredients
- 6 boneless chicken breasts, cut into large chunks
- 1 cup buttermilk
- 1 lime, juiced
- 3 cups Panko breadcrumbs
- 3 Tablespoons flour
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- 1 teaspoon chili powder
- 1 Tablespoon chopped, fresh cilantro
- 2 Tablespoons olive oil
- *Ingredients For Sauce:
- 1 stick butter
- 2 Tablespoons honey
- 2 teaspoons cayenne pepper
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- kosher salt
- fresh ground black pepper
Directions
- Add the chicken to a gallon sized zip lock bag and pour the buttermilk and juice of one lime. Add chicken, toss, and refrigerate for at least 20 minutes.
- Preheat oven to 375 degrees. Line baking sheet with parchment paper. Add a generous coating of olive oil to pan.
- In a medium sized bowl, add the panko, flour, cilantro, paprika, garlic powder, chili powder and a pinch of S+P
- Remove chicken pieces from buttermilk and dip one by one into breadcrumb mixture, coating chicken evenly before placing on baking tray.
- Transfer tray to oven and bake for 15-20 minutes, then flip the chicken and continue cooking for another 10-15 mins or until golden brown and cooked through.
- Make the sauce. Melt butter and honey together in microwave and then add the cayenne, paprika, garlic powder and a pinch of salt and pepper. Stir thoroughly to combine.
- Drizzle chicken generously with sauce mixture and serve warm. Garnish with fresh cilantro. Enjoy!
