These flaky pastries are amazing. You really don’t need an excuse to make them. Buttery, cheez-y, and delicious, they are perfect any time of day. They’re also great as an appetizer while you cook dinner! Super simple and a crowd-pleaser for sure. Enjoy! 🙂
Caramelized Onion, Spinach and Feta Pastry Puffs
Ingredients
- 1 onion, diced
- olive oil for sauteing
- pinch of red pepper flakes
- 1/2 teaspoon dried basil
- 1 teaspoon dried mint
- 1 teaspoon dried parsley
- 1 lemon, juiced
- 2-3 cups baby spinach
- 3 oz cream cheese
- 3 oz crumbled feta
- refrigerated pastry puff or croissant dough
- 2 oz melted butter
Directions
- Preheat oven to 350 degrees F
- Saute onions in olive oil, seasoned with red pepper flakes
- Once onions have caramelized (about 10 mins)stir in basil, mint and parsley. Squeeze lemon juice into pan as well. Add spinach and stir to mix with onions.
- Cut cream cheese into pieces and add to pan. Let heat melt cheese and stir into mixture. Remove from heat.
- Unroll dough and cut into about 8 rectangles. Arrange on a baking tray sprayed with cooking oil.
- Spoon mixture onto each rectangle, pinching sides to keep mixture from falling out while baking. Sprinkle crumbled feta into each pastry and brush edges with melted butter.
- Bake about 10 minutes or until underside is lightly browned. Once underside is browned I turned the oven to broil and moved the tray to the second to top rack to brown the feta. This only takes a minute.
- Remove from oven and top with fresh ground pepper and toasted sesame seeds, if desired. Transfer to serving tray and serve warm. Enjoy!
