Brown Butter Pork Chops with Sage, Apples and Balsamic

3 pork chops, about 1 inch thick
olive oil, for skillet
sea salt and fresh ground pepper
1/4 cup salted butter
a handful of fresh sage leaves
4 cloves garlic, minced
3 apples, cut into wedges
2 Tbsp balsamic vinegar
Directions
- In a large oven-proof skillet over medium-high heat, add the olive oil. When oil shimmers, add the pork chops, seasoned with salt and pepper. Cook each side until just seared, then reduce heat and continue cooking until no pink remains.
- Place pork chops on seperate plate, covered. Add butter to skillet and when it begins to darken and froth, toss in the garlic, apples and sage. Cook until apples soften slightly.
- Place the pork chops back into the skillet with the apples, and drizzle a couple tablespoons of balsamic vinegar over the meat.
- Turn on broiler and place skillet in oven, broil just until the apples begin to char slightly, about 3 minutes. Then remove the skillet from oven and spoon the butter liquid in the pan over the chops. Serve with salad and bread, enjoy!
