These delightful little pastries are such a welcome change for breakfast here, and they’re easy as pie to whip up.
Over a sliced sheet of puff pastry, you can layer brie and whatever fruit you choose (or that is in season) and throw them in the oven for a perfect change to your regular toast or cereal.
My kids love these with apples and cinnamon, but I prefer peaches or berries on top. They’re so great, and the cheese is also interchangeable as we have used a sharp cheddar that also compliments the fruit nicely. 🙂

Blueberry Brie Honey Pastries

1 sheet puff pastry, thawed
1 8 oz wheel of Brie
1 pint of berries or fresh fruit of choice, chopped
raw honey
1 egg
flaky sea salt (optional)
Directions
- Preheat oven to 400 degrees and line a baking sheet with unbleached parchment paper.
- Slice puff pastry into 8 equal rectangles and use fork to prick centre of each a few times to allow air to escape and avoid the centre from puffing up while baking.
- Place a slice of Brie in the centre of each pastry and layer a few pieces of fruit on top, gently pressing them into place.
- In small bowl, whisk the egg with a teaspoon of water. Lightly pinch up the sides of pastry and then brush the egg wash over.
- Bake for 20 minutes or until golden. Remove and let cool slightly. Drizzle honey over top and sprinkle a pinch of sea salt if desired, then serve. Enjoy!
